<IngredientText>PROCEDIMENTO per il primo impasto
Iniziare con farina, acqua, lievito madre a fettine, tuorli (da frigo) e zucchero tutti insieme. Portare ad incordatura. (senza far scaldare l&apos;impasto) Aggiungere il burro (a temperatura ambiente) in due volte.
Mettere a lievitare a 22°/26°C per 12/16 ore.
PROCEDIMENTO per il secondo impasto
Unire a tutto il primo impasto la farina e attendere che l’impasto sia ben incordato. Unire sale e poi il miele.
Poi le uova (da frigo) e lo zucchero in due volte, infine burro (a temperatura ambiente) e pasta arancia.
Appena incordato mettiamo i canditi. (io senza canditi) attenzione a non far scaldare l&apos;impasto.
Mettere in massa per un’ora sul banco di lavoro imburrato coperto
a 26°C
Dopodiché formare mettere nello stampo e attendere che arrivi ad un cm dal bordo
Cottura per stampo da 1kg 180° per 40/50 minuti circa
Al cuore devono esserci 93/94 ° per essere cotta alla perfezione
Tenere a testa in giù per almeno 4/5 ore
Tagliare dopo almeno 7/10 ore dalla cottura se riuscite a resistere

procedimento per preparare la glassa:
Montare gli albumi con lo zucchero a velo, non devono essere molto solidi ma bianchi e spumosi. Spennelate sulla colomba e adagiate le mandorle e la granella di zucchero.

<RecipeText>35gr LM secco! Questo piccolo impasto ti corrisponderà a 140gr di LM fresco! Quando è andato al raddoppia e avrà formato delle bolle! All’incirca 2/3 ore in forno spento! Nella ciotola mettere lm essiccato farina e acqua! Fare un impasto liscio ed omogeneo! Passato il tempo di lievitazione, passare alla ricetta se ne preleva 84gr che sono quelli necessari per 1 colomba! Le dosi di sono indicate per 3 Colombe!
