<RecipeText>Battez les oeufs dans un saladier avec un peu de sel et de poivre. Faites fondre le beurre dans une casserole, versez y les oeufs et faites cuire à feu très doux sans cesser de mélanger avec un fouet.
Dès que les oeufs commence à prendre, retirez la casserole du feu et ajoutez la crème fraîche.
Répartissez dans 4 petites cocottes. Déposez délicatement des copeaux de parmesan sur les oeufs. Poivrez et servez.
