<RecipeText>Épluchez les oignons. Mêlez et émincez l&apos;ail. Pelez les carottes et le céleri puis détaillez les en tronçons. Nettoyez et coupez les champignons en lamelles.
Dans une cocotte, faites chauffe l&apos;huile et mettez a dorer les lardons puis les legumes. Réservez. Faites revenir les morceaux de viande. Salez et poivrez.
Ajoutez les lardons a la viande, saupoudrez de farine et melangez bien. Laissez cuire 1 à 2 min puis ajoutez le vin et portez à ébullition en grattant le fond de la cocotte avec ue. C en bois. Laissez mijoter à feu doux 1h30 a couvert.
Ôtez le bouquet garni, ajoutez les legumes et laissez cuire encore 1h. A la fin de la cuisson, enlevez le couvercle et faites reduire la sauce pour qu&apos;elle n&apos;apprend la cuillere. Rectifiez l&apos;assaisonnement et servez aussitot.
