Plonger tous les tronçons dans le bouillon chaud, rectifier assaisonner et faire cuire +/- 10 minutes. Récupérer les têtes et laisser cuire le reste sans couvrir pendant 10 minutes. Faire suer l'oignon sans le colorer dans un peu de beurre, ajouter 1 à 2 cuillères de farine, mouiller avec le lait, le bouillon et les asperges. Porter à ébullition pendant +/- 10 minutes Poivrer Mixer le tout, ajouter la crème fraîche et rectifier l'assaisonnement.
