Prendere il composto e sistemarlo a mo' di salame su un foglio di carta forno, arrotolar in modo stretto per dargli la forma, rivestire la carta da forno con la pellicola trasparente (?), e far bollire il polpettone in acqua per 15-20'. In una ciotolina sbattere con la forchetta l'olio con il succo di limone con un pizzico di sale. Aggiungere una manciata di prezzemolo tritato e lasciar riposare. Togliere il polpettone dalla pentola, farlo raffreddare, liberarlo dalla carta forno e dalla pellicola (?) e lasciarlo freddare completamente, prima di affettarlo.
