Nel frattempo tagliare il taleggio a cubotti e le pere a fiammifero. Imburrare la padella e far saltare le pere stufandole per poco tempo con aggiunta di brodo e sale. Appena sfornati i cestini farli raffreddare leggermente e riporre al centro del piatto, quindi mettere il taleggio sul fondo e le pere ancora calde sopra lo stesso in modo che il formaggio si sciolga per bene.
