Fresh Tomato Salsa

This is an easy salsa to make when ripe tomatoes are plentiful. Omit the chile if you prefer a mild salsa or add a second one if you like it extra hot. Robertson, Robin; Neal D. Barnard (2010-01-25). Vegan Planet
    3 lg  tomatoes, chopped
    1 small  red hot chile, minced and seeded
    4  scallions, minced
    1 clove  garlic, minced
    1 tbs  lime juice
    1/4 cup  fresh clilantro, minced
      salt
      pepper



1. Combine the tomatoes, chile (if using), scallions, and garlic in a large bowl. Add the lime juice and cilantro, season with salt and pepper to taste, and stir to combine.

2. Cover and let stand at room temperature for 1 hour before serving. If not using right away, store in the refrigerator, where it will keep for 3 to 5 days. Bring back to room temperature before serving.
