Sweet potatoe pie

Prepare a 9 inch pie crust and bake it for 10 minutes at 400 degrees. |
Peel and quarter 4 sweet potatoes. Place in a saucepan, cover with boiling water and cook until tender, about 15 minutes. Drain. In a food processor, purée the potatoes with 2 eggs and 3/4 cup heavy cream, 1/2 tsp nutmeg, 1/2 cup sugar, 1/2 tsp cinnamon. Pour mixture into pie shell and bake in a 350 degree oven for 25 minutes or until point of knife comes out clean.
