Maple Roasted Chicken & Wild Rice Stuffing
Nb persons: 4
3/4 cup | chicken broth, fat free/reduced sodium |
1 box | Instant stuffing, seasoned |
4 halves | chicken breast, skinless/boneless |
6 Tbsp | maple syrup |
* Heat oven to 375
* Spray square 8x8x2 pan with non-stick cookong spray
* Heat 1/2 cup broth to boil
* Trim fat from chicken & flatten each breast to 1/2"-1/4" in thickness between wax paper or plastic wrap
* Divide stuffing among chicken breast halves
* Fold long sides of chicken over stuffing; fold up ends and secure with toothpicks
* Place chicken in pan, seam side down
* Pour chicken broth into bottom of dish
* Put chicken in dish, and baste with 3 Tbsp of syrup
* Bake 45 minutes
* Last 5 minutes of baking, baste with remaining 3 Tbsp of syrup
