Rice Pilaf

¼ cup | margarine |
1 medium | onion, chopped |
¾ cup | long grain converted rice |
2 cups | chicken broth, boiling |
salt | |
freshly ground pepper | |
½ cup | raisins |
¼ cup | pine nuts or walnuts |
¼ cup | peas, cooked briefly |
Melt margarine in a 2-quart saucepan. Add onion, and sauté until translucent. Reduce heat and add rice, stir until rice is golden, about 3 minutes. Add boiling broth, salt, and pepper, and stir well. Reduce heat, cover and simmer until liquid is absorbed, about 20 minutes. Add raisins, nuts, and peas. Heat through and serve.
Makes 4 to 6 servings.
