Cuocete i fagioli in acqua bollente per 45 minuti: suddividete in 3 cotture di 15 minuti l'una e cambiate l'acqua ogni 15 minuti; salate l'ultima cottura. Fate un trito di sedano, carota e cipolla e lardo di colonnata e soffriggetelo in una pentola di terracotta, con un goccio di vino bianco. Spellate i pomodori e tagliateli a dadolata. Tagliate a dadolata media il guanciale e saltatelo in una padella assieme al pomodoro. Aggiungete metà dei fagioli e fateli insaporire con il lardo (o le cotiche) e il pomodoro, poi uniteli al soffritto. Frullate l'altra metà dei fagioli con un po' di brodo di carne. Aggiungete il frullato di fagioli e fate cuocere per altri 15 minuti. Salate, pepate e zuccherate. Aggiungete nella pentola la pasta e un po' d'acqua calda, e fate cuocere la pasta nella fagiolata.
