<RecipeText>Come preparare Pasta e fagioli

Mettete a bagno i fagioli per 12 h.
Cuocete i fagioli in acqua bollente per 45 minuti: suddividete in 3 cotture di 15 minuti l&apos;una e cambiate l&apos;acqua ogni 15 minuti; salate l&apos;ultima cottura. Fate un trito di sedano, carota e cipolla e lardo di colonnata e soffriggetelo in una pentola di terracotta, con un goccio di vino bianco. Spellate i pomodori e tagliateli a dadolata. Tagliate a dadolata media il guanciale e saltatelo in una padella assieme al pomodoro. Aggiungete metà dei fagioli e fateli insaporire con il lardo (o le cotiche) e il pomodoro, poi uniteli al soffritto. Frullate l&apos;altra metà dei fagioli con un po&apos; di brodo di carne. Aggiungete il frullato di fagioli e fate cuocere per altri 15 minuti. Salate, pepate e zuccherate. Aggiungete nella pentola la pasta e un po&apos; d&apos;acqua calda, e fate cuocere la pasta nella fagiolata. Servite con un filo d&apos;olio a crudo.
