Fate scaldare l&apos;olio in una capace casseruola e appassitevi la cipolla affettata sottilmente a fuoco moderato, spruzzandola con il vino bianco per evitare che si colori troppo.
Aggiungete i piselli, rimestateli e fateli insaporire, quindi coprite con acqua bollente e proseguite la cottura per circa 20 minuti.
Regolate di sale e pepe. Intanto, lessate a mezza cottura i tubetti.
Scolateli e uniteli ai piselli insieme con la provola tagliata a cubetti.
Mantecate a fuoco vivo in modo che la provola si sciolga completamente.
Completate con il prezzemolo tritato e servite.
