<RecipeText>PREPARAZIONE
In una pentola contenente solamente acqua e sale, mettete a cuocere le patate sbucciate e tagliate a metà, 4 spicchi di aglio interi, le cipolle tagliate a fettine, la mentuccia, il peperoncino e i pomodori a pezzi (la cicoria selvatica va sbollentata a parte per qualche minuto, per eliminarne il sapore amaro non a tutti gradito, e va aggiunta in un secondo momento, mentre quella coltivata può essere messa fin dall&apos;inizio). A metà cottura aggiungete un uovo a persona, cotto in camicia nel brodo della stessa zuppa. A cottura ultimata, versate sul pane casereccio (in genere sono sufficienti due sottili fette a persona), il brodo di cottura insieme con la cicoria, le patate e l&apos;uovo in camicia, in modo da avere presenti per ogni piatto tutti gli ingredienti. Servite la zuppa in una scodella fonda e mettete un filo di olio extravergine d’oliva e a piacere una manciata di parmigiano o pecorino.
