Preparazione
Prepara 12 crepes come indicato a pag. 42, possibilmente con meta farina 00 e meta farina di grano saraceno (vedi box di pag. 42). Arrotola le crepes e tagliale a strisce di circa 1,5 cm di larghezza; quindi apri i rotolini per ottenere le pappardelle. Pulisci, lava e taglia a spicchi 300 g di pomodorini ciliegia. Fai caramellare in una padella 1 cucchiaio abbondante di zucchero con 50 g di burro. Aggiungi i pomodorini e 16 foglioline di salvia e cuoci a fuoco vivo per qualche minuto; poi regola di sale. Unisci le pappardelle di crespelle e amalgamale al condimento. Servile immediatamente, ben calde, con una macinata di pepe.
