Se gli zampetti hanno ancora molti peli, passateli su una fiamma per bruciacchiarli, raschiateli bene con un coltello e poi lavateli accuratamente. Quando l&apos;acqua alzerà il bollore, immergetevi gli zampetti e lasciateli cuocere a fuoco moderato per circa due ore e mezza. Lessate gli zampetti sino a poterli disossare facilmente; tagliate la polpa degli zampetti in quattro pezzi e metteteli a marinare nell&apos;olio col prezzemolo tritato, il succo di limone il sale e il pepe, lasciandoli per un ora circa. Toglieteli dalla marinata, passateli nell&apos;uovo e nel pangrattato e fateli dorare nell&apos;olio bollente.
