<RecipeText>1) Tagliate la sfoglia a larghe strisce e ricavatene dei piccoli rombi irregolari.

2) Pulite cipolla, carota e sedano, tagliateli a pezzi e tritateli grossolanamente. Pulite i funghi e tagliateli a tocchetti pressappoco della stessa dimensione. Portate a ebollizione il brodo.

3) Mettete sul fuoco una casseruola con 2 cucchiai di olio e lo spicchio d&apos;aglio schiacciato; quando l&apos;aglio e dorato, aggiungete il trito di verdure e fatelo soffriggere a fiamma bassa per qualche minuto, finche sara appassito; alla fine eliminate l&apos;aglio.

4) Unite i funghi, mescolate per qualche istante, bagnate con mezzo bicchiere di vino e fatelo evaporare a fuoco vivo.

5) Versate il brodo bollente (tenetene da parte un mestolo circa), portate tutto a ebollizione, regolate di sale, pepate e cuocete per una decina di minuti. Aggiungete i maltagliati, mescolate e portate a cottura; se la minestra diventa troppo densa, unite anche il brodo tenuto da parte. Spegnete il fuoco e lasciatela riposare per qualche minuto; suddividetela nei piatti, conditela con un filo di olio, profumatela con foglioline di cerfoglio e servite.
