<RecipeText>La ricetta in 5 mosse

1) Lasciate a bagno il cotechino per 30 minuti in acqua fredda, asciugatelo e bucatene la pelle con uno stecchino. Avvolgetelo in un telo A e trasferitelo in una pentola. Coprite con abbondante acqua fredda, portate a bollore, abbassate la fiamma, affinche l&apos;acqua frema soltanto, e lessatelo per 1 ora. Scolatelo e spellatelo.

2) Stendete la fetta di vitello sul tagliere, spianatela leggermente con il batticarne e salatela, copritela con il prosciutto, adagiatevi il cotechino e arrotolatela B.

3) Legate la carne completamente con spago da cucina C in modo da chiudere anche le due estremita.

4) Fate appassire nell&apos;olio extravergine la cipolla affettata finemente, unite la carne e fatela rosolare per qualche minuto a fiamma sostenuta.

5) Bagnate con il vino e il brodo leggermente salato e fate cuocere a fuoco lento per 1 ora. Affettate il polpettone e servitelo caldissimo accompagnato dal sugo di cottura ristretto e abbastanza denso.
