<RecipeText>Preparazione:
Ponete a fuoco vivace una pentola provvista di coperchio.
Versatevi tutto l’olio e fatevi imbiondire cipolla ed aglio; l’aglio poi lo tirerete via. Aggiungete la pancetta ed i tocchetti di sedano e lasciate rosolare lentamente; aggiustate di sale e pepe; aggiungete alcune mestolate di brodo preparato precedentemente con un dado vegetale versare tutte le patate tagliate a cubetti e portarle a cottura badando che cuociano, ma non si disfino.
Portare poi a cottura la pasta come per un risotto aggiungendo a mano a mano altre mestolate di brodo; a cottura ultimata spezzettate a mano le foglie di basilico e rimestate velocemente; alzate il fuoco, versate sulla pasta la dadolata di provola, rimestate ancora, incoperchiate e lasciate che la provola cominci a sciogliersi e filare; impiattate e cospargete con il pecorino grattugiato ed il pepe nero.
