<RecipeText>Preparazione:
Mettete a lessare la pasta in abbondante acqua salata; nel frattempo in una terrina aprite le uova e sbattetele a spuma con sale, pepe ed un trito finissimo di prezzemolo.
In un&apos;ampia padella fate fondere a fuoco dolce la sugna, badando che non prenda colore o fumighi; prelevate con una schiumarola la pasta lessata e sgrondatela bene, versatela nella padella con la sugna, rimestate con un cucchiaio di legno, aggiungendo tutto il formaggio grattugiato, infine versate le uova sbattute ed a fuoco basso continuate a rimestare fino a che l&apos;uovo non si sia rappreso uniformemente; impiattate e servite con abbondante pepe nero macinato al momento direttamente sui piatti colmi.
