Preparazione
Sbattete 150 g di farina con una presa di sale, 2 tuorli, un bicchierino di birra, un cucchiaio d&apos;olio d&apos;oliva e 3 di acqua fredda. Lasciate riposare la pastella per 2 ore, poi unite un albume montato a neve e immergetevi i carciofi. Friggeteli in olio ben caldo.
