trito finissimo di cipolla, sedano e carota e fatelo appassire nel burro, in una casseruola; poi unitevi i chiodi di garofano e la lombata di manzo. Fate rosolare la carne da ogni lato. Mescolate la salsina con poca acqua e versatela nel recipiente, aggiungendo anche il vino rosso. Salate, pepate e fate cuocere per 12 ore a fiamma bassissima, controllando attentamente la cottura diluendo con acqua calda o vino se il liquido dovesse asciugarsi troppo. Trascorso il tempo stabilito per la cottura, il sugo si sarà molto ristretto. Estraete quindi la carne dal recipiente, passatela al tritacarne e rimettetela nel sugo con il parmigiano grattugiato, il pangrattato e le uova. Rimestate con un cucchiaio di legno per amalgamare perfettamente. Se il composto dovesse risultare poco sodo, aumentate le dosi di parmigiano e pangrattato. Con la farina, le uova e un po' di sale preparate la pasta .
