Bacon Quiche

12 slices | bacon, cooked and crumbled |
4 | eggs, beaten |
2 cups | half and half |
1/2 tsp | salt |
pepper | |
1 tsp | ground mustard |
1/4 - 1/8 tsp | cayenne pepper |
chopped green onions | |
1 1/2 cups | grated cheese, either use swiss or a combo of Monterey Jack and Cheddar |
One | pie crust |
Blend eggs, half and half, and seasoning in a bowl. Roll out pastry and place in a pie plate. Place crumbled bacon and 1/2 of cheese in pie plate. Pour mixture over and sprinkle remaining cheese and sprinkle with paprika.
Bake at 425 for 15 minutes. Turn oven down to 300 and bake another 20-30 minutes or until middle barely jiggles. Let cool.
