Carom Flavored Chicken

1 1/4 lbs | Kip filets |
1 tsp | freshly ground black powder |
1/4 tsp | turmeric |
1/4 tsp | cayenne |
1tsp | cumin, grounded |
1/2 tsp | carom seeds |
3/4 tsp | salt |
1 clove | garlic, peeled and crushed |
3 tbsp | vegetable oil |
Method:
1.Preheat oven to 350*F.
2.Cut each chicken piece into thirds lengthwise & then cross-wise into 3/4 -1inch segments.
3.Put in a bowl & add the black pepper, turmeric, cayenne, cumin, carom, salt, garlic and 1 tbsp of oil.
4.Mix well & set aside for 15-30 minutes or longer, covering and refrigerating, if necessary.
5.Heat the remaining 2 tbsp of oil in a wok over very high heat.
6.When very hot, put in the chicken.
7.Stir-fry until chicken pieces are lightly browned or turn opaque on the outside.
8.Put in a baking dish and cover loosely with lightly oiled wax paper.
9.The wax paper should be inside the dish & directly on the chicken pieces.
10.Bake for 8-10 minutes or until the chicken pieces are just cooked through.
11.If not eating immediately, remove the chicken pieces from the baking dish to prevent them from drying out.
