<RecipeText>Remove and discard neck &amp; giblets from turkey. Remove plastic thermometer and plastic handle.

Air dry turkey in refrigerator for 1 hour. 

Injection method:  Inject with marinade, 1 oz. per pound.

Brining:  Heat water &amp; stir in brown sugar &amp; salt.  Cool off.  Brine overnight in cooler with ice.  Take out of brine, wipe dry, let sit at room temperature for 30 minutes.

Bring oil to 350°. Lower turkey into oil &amp; return to 350°. Cook for about 3½ minutes per pound (42 minutes for a 12 lb turkey) until breast is at 151º. Remove from oil, cover with aluminum foil &amp; rest a minimum of 30 minutes.
