Zucchini Herb Rice

1/3 cup | uncooked white rice |
2/3 cup | water |
2 tbsp | olive oil |
1 1/2 lbs | zucchini, cubed |
1 cup | sliced green onions |
1 clove | garlic, minced |
1 1/4 tsp | garlic salt |
1/2 | Basil |
1/2 tsp | paprika |
1/2 | oregano |
1 1/2 cups | chopped tomatoes |
2 cups | shredded cheddar cheese |
Directions:
Preheat oven to 350. Lightly grease casserole dish. Sauté onions, garlic and zucchini for 5 minutes. Add spices. Mix in rice, tomatoes and 1 cup of cheese. Continue to cook and stir until heated through. Transfer to baking dish. Top with remaining cheese. Bake uncovered for 20 minutes.
