8 | zucchini, cubed |
8 | tomatoes, cubed |
4 | onions, cut in four |
10 cloves | garlic, minced |

8 tbsp | olive oil |

Pare and cut the eggplants in thick slices. Sprinkle with salt and let rest 10 min on some towel paper. Wash and dry. Cube the slices.
Mix all the vegetables and herbs in a pan, cook under medium heat about 30 min. When the vegetables are cooked, add the olive oil and season to taste.
