Karen's Balsamic Roasted Beef

2 1/2 lbs | filet of beef, trimmed and tied |
2 T | Dijon mustard |
1 T | aged balsamic vinegar |
1 tsp | kosher salt |
1 T | coarsely cracked black pepper |
Preheat oven to 500•
Line a sheet pan with foil.
Place beef on the sheet. Combine the mustard, vinegar, and salt in a small bowl. Spread the mixture on the filet and brush it evenly over the top and sides. Sprinkle with pepper.
Roast filet for 30 mins exactly for medium-rare. Remove the pan from the oven, cover tightly with foil, and allow to rest 10 mins.
Slice.
Serves 5-6
