Coconut Apricot Icebox Cookies

2 cups | flour |
1 1/2 tsp | baking powder |
1/2 tsp | salt |
3/4 cup | unsalted butter, softened |
1 cup | sugar |
1 | egg |
2 cups | sweetened, dessicated coconut |
1/2 cup | coarsely chopped dried apricot or mango |
1/2 cup | coarsely chopped almonds, hazelnuts or macadamias |
Preheat oven to 350•
Stir flour with powder and salt.
In large bowl, beat butter and sugar at least 2 mins..
On low speed gradually stir in flour until evenly mixed. Do not overmix.
Stir in coconut, apricots and nuts.
Divide dough in 4.
Shape each into a log 6"" long and 1 1/4" wide. Wrap in plastic. Refrigerate until firm at least 1 hour.
Or seal in zip bag and freeze up to 1 month.
To bake:
Let stand 15 mins at room temp..
Preheat oven to 350•
Slice 1/3" each. Place on cookie sheet.
Bake 8-10 mins.. Store airtight up to 2 weeks or freeze up to 1 month.
