Ricotta Raspberry French Toast

2 | eggs |
1/2 tsp | vanilla extract |
2 T | heavy cream |
4 slices | bread |
1/2 c | ricotta cheese |
4 T | raspberry preserves |
2 T | butter |
Raspberry syrup | |
Powdered sugar |
1. Whisk eggs, vanilla & cream.
2. Smear 1/4 c ricotta on two slices of bread; spread 2 T raspberry preserves on the other bread slices.
3. Assemble the ricotta raspberry sandwiches, then dunk each sandwich in egg mixture, coating all sides.
4. With butter melted in a skillet on medium heat, cook the sandwiches till desired crispiness, about 3 minutes per side. (don't forget the edges!!!)
5. Once cooked, put on serving plate, drizzle lightly with syrup, and sprinkle with powdered sugar. Enjoy!
