Escofier pate spices
    1/2 oz  Bay leaf
    3/4 oz  Thyme
    3/4 oz  Coriander
    1 oz  Cinnamon
    1 1/2 oz  Nutmeg
    1 oz  Cloves
    3/4 oz  Ginger
    3/4 oz  Mace
    1 1/4 oz  Blk pepper
    1/4 oz  Cayenne
    1 1/4 oz  White pepper

Mix one ounce of pate spices
with 16 ounces of sea salt and
keep well covered
Use 1/3 #ounce per pound of meat
