Crustless Spinach Quiche

1 tsp | butter or margarine |
1 package (300g) | spinach, frozen, chopped, drained |
1/4 cup | chopped onion |
1 cup 1% | cottage cheese |
2/3 cup | Edam cheese, shredded |
1/2 cup | Parmesan cheese, freshly grated |
1/2 cup | milk, skim |
1 tsp | baking powder |
1/3 cup | whole wheat flour |
1 tsp | dried sweet basil |
1/4 tsp | nutmeg |
1/2 tsp | salt |
pinch | pepper |
2 | eggs |
Grease a 9" pie plate
In a bowl, combine spinach, onion, cottage cheese, Edam and Parmesan cheeses.
In a blender or food processor, combine milk, eggs, flour, baking powder, basil, nutmeg, salt and pepper. Process at high speed for 1 minute (or whisk vigorously by hand).
Pour egg mixture over vegetable mixture. Mix well. Pour into prepared pie plate.
Bake in a 350 degree oven for 45 minutes. Stand for 5 minutes before serving.
