    1 tsp  butter or margarine
    1 package (300g)  spinach, frozen, chopped, drained
    1/4 cup  chopped onion
    1 cup 1%  cottage cheese
    2/3 cup  Edam cheese, shredded
    1/2 cup  Parmesan cheese, freshly grated
    1/2 cup  milk, skim
    1 tsp  baking powder
    1/3 cup   whole wheat flour
    1 tsp  dried sweet basil
    1/4 tsp  nutmeg
    1/2 tsp  salt
    pinch  pepper
    2  eggs

Grease a 9" pie plate

In a bowl, combine spinach, onion, cottage cheese, Edam and Parmesan cheeses.

In a blender or food processor, combine milk, eggs, flour, baking powder, basil, nutmeg, salt and pepper. Process at high speed for 1 minute (or whisk vigorously by hand).

Pour egg mixture over vegetable mixture. Mix well. Pour into prepared pie plate.

Bake in a 350 degree oven for 45 minutes. Stand for 5 minutes before serving.
