Baked Custard with Coconut

1/2 cup | grated fresh coconut |
4 | eggs, beat slightly with a fork |
1/2 cup | sugar |
1 teaspoon | vanilla |
3 cups | milk, scalded and cooled |
Stir together, slowly stir in cooled milk. Pour into 8 6-oz. custard cups set in shallow pan on oven rack. Pour hot water around cups to depth 1 inch. Bake 325 degrees til knife comes out clean inserted just off center, 40-45 minutes. Serve warm.
