Wing Bean Salad (Yam Tua Phu)

1 lb | wing beans, thinly sliced |
1/2 cup | coconut milk |
1/4 cup | roasted shredded coconut |
1/4 cup | coarsely ground roasted peanuts |
1/4 cup | fried shallots |
1/4 cup | lime juice |
3 tablespoon | palm sugar |
3 tablespoon | fish sauce |
2 tablespoon | roasted chili paste, (nam prik pao) |
Blanch beans 3 minutes. Heat coconut milk. Toss dressing with beans, pour over coconut milk. Garnish with coconut, peanut and shallots.
