Slice pork. Boil water (just enough to cover the pork) with garlic, white peppercorns, sea salt and red shallot. Add black soy sauce, palm sugar and cook for 20 minutes stirring. Pork can be refrigerated up to one week or longer.

1 cup pork, thinly sliced
2 tblsp palm sugar
1 tblsp chopped garlic
1 tblsp fish sauce
1 tsp dark soy sauce
2 tblsp oil
1/4 cup water
Mix pork and garlic, fry in oil until done. Add fish sauce, soy, sugar, stir, add water. Cover and simmer until dry. Remove from heat. 3 servings.
