    1 2/3 cup  coconut milk
    2 1/2 cup  water
    10 thin slices  galangal
    2 stalks  lemongrass, crushed 2" pieces
    4  kaffir lime leaves, torn
    3  cilantro roots, crushed
    1 teaspoon  salt
    2 cups  oyster mushroom, shredded
    1 tablespoon  fish sauce
    2 tablespoon  lime juice
    1 sprig  coriander, chopped
    5  fresh chilies, crushed

1. Bring to boil. Add mushrooms. Stir in fish sauce etc.

Yield: 4 servings
Cooking time: 10 minutes
