Oyster Mushroom Soup in Coconut Milk (Het Nang Rom Tom Kha)

1 2/3 cup | coconut milk |
2 1/2 cup | water |
10 thin slices | galangal |
2 stalks | lemongrass, crushed 2" pieces |
4 | kaffir lime leaves, torn |
3 | cilantro roots, crushed |
1 teaspoon | salt |
2 cups | oyster mushroom, shredded |
1 tablespoon | fish sauce |
2 tablespoon | lime juice |
1 sprig | coriander, chopped |
5 | fresh chilies, crushed |
1. Bring to boil. Add mushrooms. Stir in fish sauce etc.
Yield: 4 servings
