Carrot Halva

2 cups | carrots |
2 cups | milk |
1/2 cup | sugar |
1/4 cup | evaporated milk |
5-6 | cardamon seeds |
8-10 | cashews |
7-8 | pistachios |
12-15 | golden raisins |
a pinch | saffron, (optional) |
2-2 1/2 tbsp | neutral oil, (safflower) or ghee |
Simmer 15-20 minutes. When starts to thicken, add sugar and oil, stir and continue to cook. When almost dry add evaporated milk and raisins. Stir and cook further 2-3 minutes. Stir and cook further 2-3 minutes. Serve hot or warm. Or refrigerate and serve cold. Serves: 4
