    2 cups  carrots
    2 cups  milk
    1/2 cup  sugar
    1/4 cup  evaporated milk
    5-6  cardamon seeds
    8-10  cashews
    7-8  pistachios
    12-15  golden raisins
    a pinch  saffron, (optional)
    2-2 1/2 tbsp  neutral oil, (safflower) or ghee

Simmer 15-20 minutes. When starts to thicken, add sugar and oil, stir and continue to cook. When almost dry add evaporated milk and raisins. Stir and cook further 2-3 minutes. Stir and cook further 2-3 minutes. Serve hot or warm. Or refrigerate and serve cold. Serves: 4
