6. Potato Filled puffed Bread (Alu puri-Nepalt)

2 cups | potatoes, (washed, boiled, peelcd and mashed) |
2 cups | wheat flour |
1/2 teaspoon | salt |
1/4 teaspoon | peppercorns, (marich) |
1/2 teaspoon | chilli, (optional) |
1/2 teaspoon | mixed spices |
1/2 teaspoon | aniseed powder |
Mustard oil or ghiu for deep frying
Process Mix mashed potatoes with salt, aniseed, chillis and mixed spices. Make soft dough of the flour by kneading it. Leave a little dry flour aside. Divide, the dough into equal parts. Make each part into the size of a golf ball. Flatten it by pressing it between the palms. Fill mashed potatoes in it; seal. to cover the potato tightly. wrap the roll in dry flour. Roll out each ball into a thin round shape of about 10.0 cm in diameter; Heat oil or ghiu in deep frying pan or karahi when some smoke comes out, put one alu puri in it and fry on both sidcs till it becomes light brown. Give some pressure in thc middle with the spoon so that alu puri may get puffed up. Serve with vegetables or pickles (achur) and chutneys.
