56. Brinjal Curry (Bhuntuko turkuri - Nepali)

1 | brinjal, (medium-sized) |
2 | potatoes, (medium-sized) chopped |
2 | tomatoes, (medium-sized) finely cut |
1 | onion, (medium-sized) chopped |
2 cloves | garlic |
2.5 cm | fresh ginger |
1/2 teaspoon | turmeric powder |
1 teaspoon | coriander powder |
3 tablespoons | oil |
1/2 teaspoon | mixed spices, (garam masala) |
1/2 teaspoon | cumin seeds, (jira) |
2 cups | water |
chopped coriander leaves |
Utensils Saucepan-l. ladle-I . plate-1, big bowl-1.
Process
Wash and cut potatoes and brinjals (brinjals are not to be peeled) in 2 .5 cm small pieces in water. Heat oil. Fry cumin seeds, chopped onion, garlic and ginger till light brown. Add tomatoes, turmeric, coriander powder and again fry for 5 minutes. Put brinjals, potatoes and tomatoes. Add salt and again fry for 2 minutes. Add water
and cook till potatoes become soft. Garnish with coriander leaves. Add mixed spices before serving. Serve hot with bread or rice.
