54. Brinjal Pure's (Bhantako bhartha-Nepali)

1 large | brinjal |
1 large | onion finely chopped |
1 large | tomato |
1/4 teaspoon | salt |
1/2 teaspoon | turmeric |
Green coriander leaves | |
1/2 teaspoon | red chilli, (optional) |
1/2 teaspoon | mixed spices |
Utensils Grill pan-1, frying pan or karahi-1, ladle-1, plate-1, big bowl-l.
Process
Wash brinjals. Dry and put under greased grill pan. Turn it over holding it by its stalk. Brinjal will become soft inside and the skin will turn black and shrunken (it takes about 20 minutes to grill). Allow it to cool down. Peel and mash. Keep aside. Heat oil in a frying pan. Fry onions till brown. Add tomatoes and again fry. Add mashed brinjals and all the spices. Stir and cook for 6-8 minutes. Garnish with green coriander leaves. Serve hot with bread or rice.
