This type of bread is very commonly prepared in the Terai of Nepal where a lot of maize or corn is grown. It is also prepared by the pcople in hilly area.
    4 cups  corn meal or flour
    1 teaspoon  salt
    1 1/2 cups  water, (hot)
    1 tablespoon  butter

Utensils bowl-1, heavy flat saucepan-1, circular disc-1, roller-1, spatula or flat spoon-1

Preparation Sift corn flour. Mix salt and knead it into a dough by adding water. Shape into balls. Shape each into a round loaf into 15 to 20 cm in diameter and 6 1.25 cm thick. To roll the bread, spread a little dry flour on the disk and roll very softy, otherwise it will break. To remove from the disc put your hand softly on the bread and turn the disc a little and take thc bread on the palm. Cook on a heavy buttered gridde. While cooking press it without breaking it. Turn it around over a couple of times until it is done. Give it slow heat till it is done on both sides.
Note. Corn meal can be mixed with 2 tablespoons chopped spinach while kneading thc dough. Variation. One small chopped tomatoe and one clove of garlic, one green
chilli can also be mixed with the flour to make the bread more tasty. Some servings prepare maize bread by pressing it with the hand on the circular disc. A little dry maize flour is spread over the disc and flat ball is kept on it and pressed softly with the hand. Move the hand in round way while pressing.
Yield: As desired.
