10. Spinach and Chicken (Palung-ra kukhuru kontusu - Nepali)

1 medium | chicken |
1 lb | spinach, (palung) |
2 | tomatoes, (cut into pieces) |
2 | onions, (medium-sized) |
1 teaspoon | coriander powder |
1/2 teaspoon | black pepper, (ground) |
4 cloves | garlic, (crushed) |
4 | cloves |
2 tablespoons | ghiu |
salt to taste |
Utensils Cooking pot-1, ladle-1, big bowl-2.
Process
Clean and cut chicken into pieces. Wash spinach carefully and cut it finely. Melt ghiu in a saucepan and heat gently onions and crushed garlic. Add coriander, cloves, pepper. Add tomatoes and spinach. Cook for 5 minutes. Add chicken and salt. Cover and heat till the chicken becomes tender.
Yield: 4 servings
