Use recipe for Peerless Angel Food with Pineapple Icing, decreasing sugar to 1 1/4 cups and egg whites to 1 cup (8-10 egg whites). Add 1/4 cup of the sugar to flour and the remaining 1 cup to egg whites. Bake in slow oven (325° F.) 45 to 50 minutes. This cake may be baked in layers. Bake in two ungreased 9-inch layer pans in moderate oven (350° F.) 30 minutes, or until done. Remove from oven and invert on rack until cold. |
