LUSCIOUS BANANA LAYER CAKE

2 cups | sifted Swans Down Cake Flour |
1 teaspoon | Calumet Baking Powder |
1 teaspoon | soda |
1/2 teaspoon | salt |
1/2 cup | butter or other shortening |
1 1/2 cups | sugar |
1 egg and 1 egg yolk, well beaten | |
1 cup | mashed bananas |
3/4 cup | sour milk or buttermilk |
1 teaspoon | vanilla |
Sift flour once, measure, add baking powder, soda, and salt, and sift together three times. Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy. Add eggs and beat well; then add bananas and beat again. Add flour to creamed mixture, alternately with milk,
a small amount at a time, beating after each addition until smooth. Add vanilla. Bake in two greased pans, 8x8x2 inches, in moderate oven (375° F.) 25 minutes. Spread Lemon Filling between layers and Orange Lemon Frosting on top and sides of cake.
