Sesame Tofu

SESAME TOFU Sesame has been used regularly by the priests of Zen temples for a long time. It is very nutritious.
    1 cup  white sesame seeds
    1 cup  kuzuko, (arrowroot starch แป้งเท้ายายม่อม)
    4 cups  water
      Horseradish
      Soy sauce

DIRECTIONS:

(1) Roast white sesame seeds till aromatic over very low heat. (Be careful not to burn.)

(2) Crush kuzuko (arrowroot starch) smoothly. Don’t leave solid pieces.

(3) Grind (1) well in suribachi (Japanese grinding bowl) and dilute with kuzuko (arrowroot starch) and water.

(4) Strain (3) carefully stir (from the bottom of the saucepan) and simmer.

(5) When the ingredients are elastic, immediately put them into a metal bowl, which has been immersed in water and drained. Put, gauze on top and cool. Allow to solidify.

(6) Cut into 4 pieces and serve with horseradish on top. Pour a dash of soy sauce around sesame-tofu.
