38. Bamboo Tip-Shoots (Tushako tar kari -Nepali)

1 cup | bamboo tip shoots cut into pieces |
1/2 cup | potatoes sliced |
1/4 teaspoon | fenugreek seeds |
1/4 teaspoon | chilli, (optional) |
Grind to make a paste | |
1/4 teaspoon | turmerlc |
1/4 teaspoon | coriander |
1 clove | garlic |
1.25 cm | ginger |
1 tablespoon | oil |
Salt to taste |
Utensils Big bowl-1, deep saucepan or pressure cooker-1, ladle-l, plate-1
Process
Peel out the bark of bamboo shoots so as to take out the tender parts. Cut into small pieces 2.5 cm to 5 cm in length. Cut potatoes lengthwise. Wash in water and drain out. Fry fenugreek seeds in oil and add potatoes and bamboo shoots. Add salt. Add the paste and cook it for 10-15 minutes till tender. Serve hot.
Yield: 4-5 servings
