Tender tips of bamboos are also cooked to make delicious dishes of vegetables.
    1 cup  bamboo tip shoots cut into pieces
    1/2 cup  potatoes sliced
    1/4 teaspoon  fenugreek seeds
    1/4 teaspoon  chilli, (optional)
Grind to make a paste
    1/4 teaspoon  turmerlc
    1/4 teaspoon  coriander
    1 clove  garlic
    1.25 cm  ginger
    1 tablespoon  oil
      Salt to taste

Utensils Big bowl-1, deep saucepan or pressure cooker-1, ladle-l, plate-1

Process
Peel out the bark of bamboo shoots so as to take out the tender parts. Cut into small pieces 2.5 cm to 5 cm in length. Cut potatoes lengthwise. Wash in water and drain out. Fry fenugreek seeds in oil and add potatoes and bamboo shoots. Add salt. Add the paste and cook it for 10-15 minutes till tender. Serve hot.
Yield: 4-5 servings
