Tonkatsu Sauce

    3 medium  onions, thinly sliced
    2 teaspoon  oil
    1 cup  dashi stock, (1/2 teaspoon dashi plus 1 cup water)
    4 tablespoons  mirin
    4 tablespoons  soy sauce
    4 teaspoons  sugar
    2  eggs, lightly beaten (optional)

Saute onion in oil. Remove and set aside
Add dashi, mirin, soy, and sugar. Simmer over high heat 5 minutes. Add onions, remove from heat. Add eggs, stir gently. Serve with Tonkatsu.
