Sushi Rice

Rice:
    1 1/2 cup  raw Japanese rice
    2 cups  water
    1 strip  kelp, (konbu)
Cook rice with kelp in electric rice steamer until done. Set aside. Dressing:
    2 tablespoons  rice vinegar
    1 tablespoon  sake
    2 teaspoons  sugar
    1 teaspoon  salt

Put cooked rice in wide wooden tub or large bowl. Add dressing, stir gently in circular motion, fanning the rice to help cool. Cover with a damp cloth. Keep at room temperature and use within 4 hours.
