Sushi Rice

Rice: | |
1 1/2 cup | raw Japanese rice |
2 cups | water |
1 strip | kelp, (konbu) |
Cook rice with kelp in electric rice steamer until done. Set aside. Dressing: | |
2 tablespoons | rice vinegar |
1 tablespoon | sake |
2 teaspoons | sugar |
1 teaspoon | salt |
Put cooked rice in wide wooden tub or large bowl. Add dressing, stir gently in circular motion, fanning the rice to help cool. Cover with a damp cloth. Keep at room temperature and use within 4 hours.
