Green Beans with Sesame Sauce

7 oz (200 grams) | green beans trimmed, cut into 1 1/4" pieces and blanched |
1 oz (30 grams) | deep fried tofu (abura age), blanched, cut into strips 1 1/4" x 1/4" |
Toasted white sesame seeds for garnish | |
All purpose dashi stock | |
1 quart | dashi stock |
1/4 cup | soy sauce |
1 teaspooon | salt |
White Sesame Sauce | |
1/4 cup | white sesame seeds, toasted, [2 oz (60 grams)] |
1 tablespoon | soy sauce |
3 tablespoon | sake |
1. Soak blanched beans in dashi stock 1 hour.
2. Pour boiling water over tofu in strainer. Blanch in dashi stock.
3. To make sesame sauce, pulverize toasted sesame seeds and combine with other ingredients. Mix beans with sauce. Garnish with toasted seeds.
