Chicken Wings and Potato in Ginger and Soy (Tebasaki To Sato-Imo)

1 lb (500 grams) | chicken wings |
3 tablespoons | sake or lao kao |
2 teaspoons | oil |
3/4 inch | young ginger root, raw |
5 | spring onions |
400 grams | potato, cut into chunks |
2-3 tablespoons | Japanse soy sauce |
2 teaspoons | dark soy sauce |
2-3 teaspoons | sugar |
12 | snow peas for garnish |
1. Marinate chicken in sake for 30 minutes in covered pan.
2. To the chicken, add ginger, onion, and enough water to cover. Simmer, covered with a lide for 5 minutes.
3. Add potato, soy sauce, and sugar and continue to simmer, covered with a lid, until the potatoes are cooked.
4. Add the snow peas to the pot and allow to steam on top of the chicken.
Serve with peas on the side.
Yield: 3-4 servings
