    1 lb (500 grams)  chicken wings
    3 tablespoons  sake or lao kao
    2 teaspoons  oil
    3/4 inch  young ginger root, raw
    5  spring onions
    400 grams  potato, cut into chunks
    2-3 tablespoons  Japanse soy sauce
    2 teaspoons  dark soy sauce
    2-3 teaspoons  sugar
    12  snow peas for garnish

1. Marinate chicken in sake for 30 minutes in covered pan.
2. To the chicken, add ginger, onion, and enough water to cover. Simmer, covered with a lide for 5 minutes.
3. Add potato, soy sauce, and sugar and continue to simmer, covered with a lid, until the potatoes are cooked.
4. Add the snow peas to the pot and allow to steam on top of the chicken.
Serve with peas on the side.

Yield: 3-4 servings
