2 | green Anaheim peppers, seeds removed and chopped |
2 | jalapeno peppers, chopped |
½ Tbsp | minced garlic |
1 Tbsp | minced ginger |
¼ c | clarified butter, (ghee) (preferred) or vegetable oil |
1 ¼ tsp | ground cardamom |
¼ tsp | ground grains of paradise |
½ tsp | ground ajwain seeds |
¼ c | chopped cilantro, (preferred) or Italian parsley |
½ Tbsp | minced Thai holy basil |
Instructions
In a skillet, combine the peppers, garlic, ginger and ghee. Saute until peppers are tender, about 15 minutes. Drain oil off and place in blender with spices. Puree to thin paste, adding a bit of water as necessary. Use as condiment for breads, meats.
